It is formed by grinding cocoa beans once released from the shell to create nibs (a term used for chunky beans), the grinding process varies between production companies, but is mainly based on the reduction of the particle size of the nibs from 0.5 cm to less than 30 um. to make it less perceptible to the human palate. Through this process, the cocoa butter or fat is also released. This stage is of great importance in the production of chocolate since, by releasing the fat, a good flow of the product is allowed, giving the right texture when it melts at body temperature.
Our factory is in Santiago de Surco Peru where we specialize in the production of organic cacao derivatives, and chocolate. We do not produce any milk chocolate or provide any inclusions within our chocolate containing nuts. We are a nut free, dairy free, allergen free, GMO free, soy free, gluten free, kosher, and organic cacao & chocolate producer. We typically only use 3 organic ingredients in our chocolate production.
